Ingredients

  • ¼ tsp baking soda
  • 1 cup plain flour
  • 1 cup ice cold water
  • 1 egg yolk
  • ½ tsp salt
  • Sweet Chilli & Lemon Sauce Ingredients
  • ½ cups sweet chilli sauce
  • ¼ cups fresh lemon juice
  • 1 spring onion, trimmed and chopped
  • 300g Pams Prawns

Instructions

  1. Thaw and drain Prawns with their Tails On
  2. Preheat deep fryer to 180 degrees
  3. Mix baking soda, flour and salt together in a bowl
  4. Combine the ice cold water and egg and pour into the dry ingredients. Mix with a fork to remove all lumps
  5. Pat dry the prawns with a paper towel to remove any excess moisture and dip into the batter, holding the prawn by the tail
  6. Place in the hot oil and cook for 2-3 minutes till golden brown
  7. Place on a paper towel to remove excess oil
  8. To make the sauce, combine the spring onion with the sweet chilli sauce and lemon juice.
