Cucado Salad

Ingredients

  • Half a large telegraph cucumber (or 1 whole small)
  • 1 whole avocado
  • 3/4 chopped spring onions
  • 1 lge ripe tomato or 2 small
  • Salt and ground pepper
  • A few sprigs fresh basil, chopped finely
  • Juice of 1 lemon.

Instructions

  1. Slice cucumber and layer into serving dish.
  2. Peel avocado, slice and layer on cucumber.
  3. Sprinkle a portion of onion on top.
  4. Lay 3/4 slices of tomato.
  5. Proceed to layer until all ingredients are used, finishing with layer of tomato.
  6. Salt & ground black pepper to taste. and garnish with chopped Basil. Squeeze lemon juice over whole salad.
