Summer Spinach Sensation

Ingredients

  • 1-2 bunches fresh spinach leaves, stems removed
  • 2T freshly chopped mint
  • 1 cup whole baby beetroot cut tin is fine
  • 3/4 c fresh peas or beans
  • 150g feta cheese
  • 1/2 cup pinenuts or cashews roasted
  • 3-4 tomatoes halved
  • 1/3 c spicy dressing
  • Spicy dressing combine in a jar or blender to mix. Keeps well:
  • 4 tbsp red wine vinegar
  • 1/2 c extra virgin olive oil
  • 1/2 tsp grainy mustard
  • 1/2 tsp crushed garlic
  • 1/4 c crushed chillies
  • Salt
  • Black pepper

Instructions

  1. Combine salad ingredients leaving beetroot prior to serving.
  2. Toss the dressing.
  3. By adding a little cooked cripsy bacon or chicken etc this makes a good light main meal or starter.
  4. Serve immediately.
