Mixed Berry Summer Pudding

  • ¼ cup Pams White Sugar
  • 2 tablespoons water
  • 250g Pams Mixed Berries
  • 4 slices white toast bread, crusts removed


  1. Place sugar, water and frozen berries in a small saucepan, stir until sugar has dissolved and the fruit has thawed but the fruit pieces are still whole.
  2. Line the bottom and sides of a high sided bowl (about 500ml capacity) with the slices of bread, reserving some for the top.
  3. Add the berries in the syrup and cover with the remaining bread. Lightly press the bread down with a plate, weigh the plate down and cool the pudding in the refrigerator overnight or for approximately 4 hours.
