Mushroom Meatball Slider

  • 2x 250g Breakfast Portobello Meadow Mushrooms
  • 8 small dinner rolls or mini burger buns
  • 250g Quality Mark Beef Steak Mince
  • ½ onion – finely chopped
  • 1 egg
  • ½ cup breadcrumbs
  • 80-100g cheese of choice – cut into 8 cubes (mozzarella is very good)
  • 8 tsp basil or tomato pesto
  • Salad greens of choice
  • Good quality mayonnaise or aioli
  • Olive oil for drizzling
  • Salt and ground black pepper


  1. Combine minced beef, onion, egg and breadcrumbs. Season with salt and pepper.
  2. Divide this mixture into 8 portions. Place a cube of cheese in the centre of each portion and form a meatball around the cheese.
  3. Place Portobello mushrooms on an oven tray, gill side up. Alongside place the meatballs. Drizzle with olive oil and season with salt and pepper. Bake at 180° for 15 minutes. Or instead grill on the BBQ or in a large frying pan for 5-10 minutes.
  4. On a serving platter place the bottom halves of the dinner rolls or mini burger buns and spread with ½ teaspoon of mayonnaise or aioli.
  5. Place whole Portobello mushroom on the bun or roll with mushroom gill side facing up.
  6. Add a meatball, teaspoon of pesto and salad greens.
  7. Finish with roll or bun tops.
  8. Serves straight away
