Marry Me Chickpeas

Ingredients

  • 3 cloves garlic, finely chopped

  • 1 ½ tsp Mrs Rodger’s dried mixed herbs

  • ⅔ cup Pams sundried tomatoes, finely chopped

  • 1 can Pams chickpeas in brine, drained

  • 1 cup Pams cream

  • 1 Tbsp Leggo tomato paste

  • ⅓ cup finely grated Perfect Italiano parmesan

  • Fresh herbs, to garnish (optional)

Method

  1. Heat a drizzle of olive oil in a medium frying pan on medium-high heat. Fry the garlic and mixed herbs for 1 minute, until fragrant.

  2. Add the chopped sundried tomatoes and fry for a further 1 minute.

  3. Add the chickpeas, cream and ½ tsp salt. Stir together and bring to a summer. Simmer for 5 minutes, until thickened and creamy

  4. Top with the parmesan and fresh herbs, if using.

  5. Great served on toast, or with your favourite pasta.
