Peanut Butter Rice Crispy Bars
A chocolately spin on the classic rice crispy treats, these Peanut Butter Rice Crispy Bars are the ultimate sweet treat! A little bit salty and a little bit sweet they’re hard to resist.

½ cup peanut butter

½ cup melted coconut oil

¼ cup honey

3 cups rice snaps

250g dark chocolate, melted

Flaky salt, for sprinkling (optional)

Line a small slice tin with baking paper.

Whisk the peanut butter, coconut oil and honey together in a small bowl with a pinch of salt. Add the rice snaps to a large bowl, then pour over the peanut butter mixture. Toss together, until combined.

Tip the mixture into the prepared slice tin and press firmly into an even layer. Place into the freezer to set for 20 minutes, before topping the slice with the melted chocolate. Sprinkle over a pinch of flaky salt, if desired.

Place the slice back into the fridge or freezer, until the chocolate and base has completely set.

Cut into bars once set. Store in an airtight container in the fridge.
