Smashed Pea Toast
Goodbye avos, hello peas. This delicious Smashed Pea Toast is crunchy and colourful, the perfect dish for your Instagram to eat first!

Ingredients

2 cups frozen peas

Zest & juice of ½ lemon

1 handful fresh basil + extra to garnish

1 clove garlic, peeled

2 Tbsp olive oil + extra for drizzling

½ tsp table salt
To Serve:

Fresh bread or toast

Chilli flakes (optional)

Place the peas into a medium heatproof bowl. Cover the peas with boiling water. Let sit for 5 minutes, then drain and rinse the peas with cold running water.

Add the peas to a nutribullet or mini food-processor, along with the remaining smashed pea ingredients. Pulse several times into a coarse puree.

Spread the smashed peas over toast bread or sourdough.

Garnish with a drizzle of olive oil, some basil and chilli flakes.
