Smashed Pea Toast

Goodbye avos, hello peas. This delicious Smashed Pea Toast is crunchy and colourful, the perfect dish for your Instagram to eat first!

 

Ingredients

Method

  • 2 cups frozen peas 

  • Zest & juice of ½ lemon 

  • 1 handful fresh basil + extra to garnish 

  • 1 clove garlic, peeled 

  • 2 Tbsp olive oil + extra for drizzling 

  • ½ tsp table salt


To Serve: 

  • Fresh bread or toast 

  • Chilli flakes (optional)

  1. Place the peas into a medium heatproof bowl. Cover the peas with boiling water. Let sit for 5 minutes, then drain and rinse the peas with cold running water. 

  2. Add the peas to a nutribullet or mini food-processor, along with the remaining smashed pea ingredients. Pulse several times into a coarse puree. 

  3. Spread the smashed peas over toast bread or sourdough.

  4. Garnish with a drizzle of olive oil, some basil and chilli flakes.
