Valentine’s Cheats Tomato Tart
Roses are red, tomatoes are too, make it this Valentines to say I love you!

2x sheets flaky puff pastry, defrosted

¾ pack cream cheese, softened

75g tasty cheese, grated

1 ½ punnets cherry tomatoes, cut in half

Fresh basil leaves, to serve

Preheat your oven to 200°C fan bake. Line a large baking tray with baking paper.

Cut out a heart shape from each sheet of puff pastry. Place onto the lined oven tray.

Using the tip of a sharp knife, score a border on each heart pastry sheet about 1.5 cm from the edge. Prick the pastry all over with a fork inside the scored border.

Place for an initial 15 minutes, until golden brown and puffed.

Meanwhile, combine the cream cheese and grated cheese together in a bowl.

Add the tomatoes to a bowl, season well with salt and toss together with a drizzle of olive oil.

Spread the cream cheese mixture inside the border of the baked puff pastry hearts. Scatter over the cherry tomatoes.Return to the oven for a further 20 minutes, until the cherry tomatoes are softened and golden.

Garnish with the basil leaves.
