Smashed Kumara Pizza
The humble kumara turns gourmet with this delicious pizza. Glow up!

Ingredients
Method
- 1 large orange kūmara (about 500g)
- 1 handful cherry tomatoes, cut in half
- 3 Tbsp Anathoth pizza sauce with tomato & herbs
- ½ cup Pams grated mozzarella cheese
1. Preheat your oven to 200°C.
2. Prick the kūmara several times with a fork. Place in a microwave safe bowl and microwave for 12-15 minutes, turning it over halfway through, or until very tender and soft to touch.
3. Line a baking tray with some baking paper. Cut the kūmara in half lengthwise and on the baking tray. Lay another sheet of baking paper on top, then use the base of a heavy frying pan to squash the kūmara into a flat circle/disk.
4. Drizzle the kūmara with some olive oil and bake for an initial 20-25 minutes, or until golden.
5. Spread the pizza sauce on top of the kūmara base, followed by the cheese and cherry tomatoes. Drizzle with some more olive oil and season with salt.
6. Bake for another 20-25 minutes, or until golden brown.
7. Garnish with some chilli flakes and basil leaves, if desired.
