Smashed Kumara Pizza
The humble kumara turns gourmet with this delicious pizza. Glow up!

Ingredients

- 1 large orange kūmara (about 500g)
- 1 handful cherry tomatoes, cut in half
- 3 Tbsp Anathoth pizza sauce with tomato & herbs
- ½ cup Pams grated mozzarella cheese
- Preheat your oven to 200°C.
- Prick the kūmara several times with a fork. Place in a microwave safe bowl and microwave for 12-15 minutes, turning it over halfway through, or until very tender and soft to touch.
- Line a baking tray with some baking paper. Cut the kūmara in half lengthwise and on the baking tray. Lay another sheet of baking paper on top, then use the base of a heavy frying pan to squash the kūmara into a flat circle/disk.
- Drizzle the kūmara with some olive oil and bake for an initial 20-25 minutes, or until golden.
- Spread the pizza sauce on top of the kūmara base, followed by the cheese and cherry tomatoes. Drizzle with some more olive oil and season with salt.
- Bake for another 20-25 minutes, or until golden brown.
- Garnish with some chilli flakes and basil leaves, if desired.
