Smashed Broccoli Parmesan Bites
When you’re tired of steamed and ready for smashed, these crispy Parmesan Broccoli Bites are the ultimate level up! Hello new favourite snack.

1 cup finely grated Perfect Italiano parmesan

2 broccoli, florets cut off

Olive oil, for drizzling

¼ cup Best Foods mayonnaise

2 tsp hot sauce of choice (such as sriracha or Kaitaia fire)

Preheat your oven to 200°C. Line a baking tray with baking paper. Bring a large pot of salted water to the boil.

Cook the broccoli in the boiling water, until fork tender. Drain and rinse with cold running water to cool. Pat the broccoli dry with a paper towel.

Spoon heaped tablespoons of the grated parmesan onto the lined baking tray, spacing them apart. Place a broccoli floret on top of each mound of parmesan. Using the base of a glass cup, squish the broccoli into the parmesan. Drizzle generously with olive oil and season with salt.

Bake for 15-20 minutes, until golden brown and crispy.

Combine the mayonnaise and hot sauce together. Serve the sauce on the side for dipping.
