Marry Me Chickpeas

3 cloves garlic, finely chopped

1 ½ tsp Mrs Rodger’s dried mixed herbs

⅔ cup Pams sundried tomatoes, finely chopped

1 can Pams chickpeas in brine, drained

1 cup Pams cream
-
1 Tbsp Leggo tomato paste

⅓ cup finely grated Perfect Italiano parmesan

Fresh herbs, to garnish (optional)

Heat a drizzle of olive oil in a medium frying pan on medium-high heat. Fry the garlic and mixed herbs for 1 minute, until fragrant.

Add the chopped sundried tomatoes and fry for a further 1 minute.

Add the chickpeas, cream and ½ tsp salt. Stir together and bring to a summer. Simmer for 5 minutes, until thickened and creamy

Top with the parmesan and fresh herbs, if using.

Great served on toast, or with your favourite pasta.
