Baked Potato

Serves  4
Prep time: 5 minutes
Cooking time: 10 minutes

The humble spud is easily spruced up with a few minutes in the microwave and a dollop of dairy. Go on, get to it!

 

Ingredients

Method

  • 2 x med/large potatoes
  • 125g sour cream
  • ½ cup grated cheese
  • Salt and pepper
  • Fresh chives

  1. Wash and dry your potatoes.
  2. Stab each potato with a fork 3-4 times.
  3. Microwave potatoes for 4 minutes, flip them and then microwave them again for another 3 minutes or until tender.
  4. Let the potatoes cool.
  5. Cut the potatoes in half length-ways and scoop out the flesh. Add it to a bowl with the sound cream, cheese, salt and pepper.
  6. Stuff the mash back into the potato skins and sprinkle with fresh chives
