Beer Battered Pickles

Serves 6-8

  • 1 jar crinkle cut gherkins, drained 

  • 1 ¼ cups self-rising flour 

  • ½ tsp fine salt 

  • 330ml Behemoth x Foursquare hazy IPA

  • Neutral oil, for frying

  • ½ cup Wattie’s x Foursquare tomato sauce, to serve

  1. Drain the gherkins, scatter over a clean tea towel and pat them dry. 

  2. Add the flour and salt to a large bowl and mix together. Add the beer and whisk together into a smooth batter. Set aside. 

  3. Heat 3cm of oil in a large, heavy-based frying pan over medium heat. 

  4. Dip each gherkin slice in the batter, shaking off the excess, then drop into the hot oil. Fry them in batches for 2-3 minutes each side, until golden brown. 

  5. Set aside to drain on a wire rack. 

  6. Serve with the tomato sauce for dipping.
