Beer Battered Pickles

- 1 jar crinkle cut gherkins, drained
- 1 ¼ cups self-rising flour
- ½ tsp fine salt
- 330ml Behemoth x Foursquare hazy IPA
- Neutral oil, for frying
- ½ cup Wattie’s x Foursquare tomato sauce, to serve
- Drain the gherkins, scatter over a clean tea towel and pat them dry.
- Add the flour and salt to a large bowl and mix together. Add the beer and whisk together into a smooth batter. Set aside.
- Heat 3cm of oil in a large, heavy-based frying pan over medium heat.
- Dip each gherkin slice in the batter, shaking off the excess, then drop into the hot oil. Fry them in batches for 2-3 minutes each side, until golden brown.
- Set aside to drain on a wire rack.
- Serve with the tomato sauce for dipping.
