Cheesy Spinach & Feta Stuffed Pitas
Try these simple spinach stuffed pitas, packed full of easy cheesy goodness. The perfect way to use up those lonely leftover pitas in the pack.

- 2 large handfuls fresh baby spinach
- 200g feta cheese
- 1 clove garlic, finely grated (optional)
- 75g tasty cheese, sliced
- 4 pita breads
- Add the spinach to a microwave safe bowl and microwave for 1 minute, until wilted. Crumble the feta into the bowl and add the garlic (if using).
- Season with black pepper and drizzle with a little olive oil. Mix together, until combined.
- Cut the tasty cheese into slices. Cut the pita bread crosswise into two halves.
- Top one half of the pita bread with the spinach feta mixture and tasty cheese. Sandwich the other pita half on top.
- Toast in a sandwich press for 3-4 minutes, until golden brown and the cheese has melted.
- Serve.
