Ham and Egg Cups

Work smarter, not harder these school holidays. A batch or two of these in the weekend will have the kids’ tummies full the whole holidays (or at least until lunch)!



  • 12 pieces shaved ham
  • 12 eggs
  • 1 ½ cups grated cheese
  • Salt and pepper
  • Fresh herbs (optional)

  • Preheat your oven to 200ºC
  • Spray a 12 cup muffin tin
  • Line each cup with a slice of ham
  • Add a generous pinch of grated
    cheese to the bottom of each cup
  • Crack an egg into each cup
  • Season with salt and pepper
  • Bake for 12 minutes if you want a
    runny yolk, 15 if you want a set yolk.
  • Use a spoon to remove from the muffin
  • Sprinkle with fresh herbs
