Ham and Egg Cups

Work smarter, not harder these school holidays. A batch or two of these in the weekend will have the kids’ tummies full the whole holidays (or at least until lunch)!

Ingredients

  • 12 pieces shaved ham

  • 12 eggs

  • 1 ½ cups grated cheese

  • Salt and pepper

  • Fresh herbs (optional)

Method

  1. Preheat your oven to 200ºC

  2. Spray a 12 cup muffin tin

  3. Line each cup with a slice of ham

  4. Add a generous pinch of grated cheese to the bottom of each cup

  5. Crack an egg into each cup

  6. Season with salt and pepper

  7. Bake for 12 minutes if you want a runny yolk, 15 if you want a set yolk.

  8. Use a spoon to remove from the muffin tin.

  9. Sprinkle with fresh herbs
