
Ham and Egg Cups

Work smarter, not harder these school holidays. A batch or two of these in the weekend will have the kids’ tummies full the whole holidays (or at least until lunch)!

Ingredients
12 pieces shaved ham
12 eggs
1 ½ cups grated cheese
Salt and pepper
Fresh herbs (optional)
Method
Preheat your oven to 200ºC
Spray a 12 cup muffin tin
Line each cup with a slice of ham
Add a generous pinch of grated cheese to the bottom of each cup
Crack an egg into each cup
Season with salt and pepper
Bake for 12 minutes if you want a runny yolk, 15 if you want a set yolk.
Use a spoon to remove from the muffin tin.
Sprinkle with fresh herbs
